Blackened Atlantic Halibut

Ingredients

Atlantic halibut fillets
4-170 g (6 oz)
Oil for frying
Blackening Mix
ground cumin
15 ml (1 tbsp)
paprika
30 ml (2 tbsp)
smoked paprika
15 ml (1 tbsp)
garlic powder
15 ml (1 tbsp)
cayenne
22 ml (1 1/2 tbsp)
white pepper
15 ml (1 tbsp)
black pepper
7.5 ml (1/2 tbsp)
ground thyme
7.5 ml (1/2 tbsp)
chili powder
7.5 ml (1/2 tbsp)

Instructions

  • Blackening mix: Combine all spice ingredients and mix well.
  • Heavily dust halibut with Blackening mix and let sit for 10 minutes in refrigerator.
  • Heat a heavy bottomed skillet over medium high heat.  Brush with oil.  Add fish.
  • Cook on each side for 3-4 minutes depending on size of fillet.
