Atlantic Cod Cobbler

Ingredients
Cod fillets
1 1/2 lbs. (680g)
Unsalted butter
1/4 cup (60mL)
Flour
1/3 cup (80mL)
Whole milk
2 cups (500mL)
Sharp cheddar cheese, grated
1 cup (250mL)
Biscuit Topping
Sharp cheddar cheese, grated
1/2 cup (125mL)
Unsalted butter
1/4 cup (60mL)
Baking powder
1 tsp (5mL)
Flour
1 3/4 cup (430mL)
Salt

Instructions
- Place cod fillets in the bottom of a greased 9×9 Casserole dish
- Make a cheese sauce by melting butter and adding flour, let cook for about 2-3 minutes. Then gradually add milk, stirring constantly, until thickened, then add grated cheese and cook just until cheese is melted.
- Pour over cod fillets
- Make biscuits by sifting flour, salt and baking powder together and then rubbing in butter until mixture resembles coarse meal. Add grated cheddar. Mix milk and egg together and pour into flour mixture.
- Toss gently to form a workable dough. Roll Out onto lightly floured board and cut into circles with biscuit cutter. Place on top of cod and sauce mixture.
- Brush biscuits with a little milk and sprinkle with a little grated cheddar
- Bake at 450 degrees for 25-30 minutes.
