Blackened Atlantic Halibut
Ingredients
Atlantic halibut fillets
4 x 6 oz. (170g)
Oil for frying
Blackening Mix
Ground cumin
1 tbsp. (7.5mL)
Paprika
2 tbsp. (30mL)
Smoked paprika
1 tbsp. (7.5mL)
Garlic powder
1 tbsp. (7.5mL)
Cayenne pepper
1 1/2 tbsp. (22.5mL)
White pepper
1 tbsp. (7.5mL)
Black pepper
1/2 tbsp. (7.5mL)
Ground thyme
1/2 tbsp. (7.5mL)
Chili powder
1/2 tbsp. (7.5mL)

Instructions
- Blackening mix: Combine all spice ingredients and mix well.
- Heavily dust halibut with Blackening mix and let sit for 10 minutes in refrigerator.
- Heat a heavy bottomed skillet over medium high heat. Brush with oil. Add fish.
- Cook on each side for 3-4 minutes depending on size of fillet.
