Brown Sugar Pecan Glazed Salmon Fillets

Ingredients
Pecans, coarsely chopped
1/3 cup (80mL)
Brown sugar, firmly packed
1/4 cup (60mL)
Unsalted butter
4 tbsp. (60mL)
Newfoundland screech rum
1 tbsp. (15mL)
Olive oil
1 tbsp. (15mL)
Salmons fillets
4 x 6oz. (175g)

Instructions
Brown sugar pecan glaze
- In a small non-stick pan, fry brown pecans lightly over medium heat. Add the brown sugar and screech, heat until simmering, then set aside.
Salmon fillets
- Preheat oven to 425F
- In a cast iron skillet, heat up the olive oil on medium high heat. Sear each side of the salmon fillets about two minutes each side.
- Transfer skillet to hot oven and roast fillets for 4 minutes. Spoon the glaze over fillets and continue to roast for an additional 3-5 minutes.
- Turn oven off and let salmon stand for 2 minutes before serving.
