Snow Crab Summer Rolls

Ingredients

Roll
Vegetables of your choice (Winter – cabbage, carrots, leeks or Summer – sweet peppers, cucumber, scallions)
2 cups, julienned
Sesame oil
1/4 tsp
Rice paper wrappers
6 sheets
Fresh cilantro sprigs
1/2 cup
Fresh basil leaves
1/2 cup
Crabmeat
1 cup (drained)
Lime
½ juiced
Lime Wedges
Soya Sauce
Salt & Pepper
Sauce
Lime
½ juiced
Fish sauce
3 tbsp
Honey
3 tbsp
Water
2 tbsp
Thai red chile
1/2
Toasted sesame seeds
2 tsp (reserved 1 tsp for garnish)
Chives
4 or 5
Cilantro
4 sprigs
Mint
2 sprigs

Instructions

Roll
  1. Mix herbs, vegetables, lime juice, salt and pepper. Let sit 5 minutes
  2. Squeeze out liquid and set aside
  3. Fill a large, shallow bowl with water. Soak 1 rice paper wrapper in the water until just pliable, about 30 seconds.
  4. Spread on a work surface.
  5. Top the wrapper with some of the crab, vegetables, basil, cilantro
  6. Firmly fold the wrapper over the filling, tuck in the sides and roll.
  7. Transfer to a platter and cover with a damp paper towel.
  8. Garnish with cilantro, chives, toasted sesame seeds, lime wedges and a small dishes with desired sauce
Sauce
  1. Place all ingredients in a blender and mix
  2. Pour in small dipping dishes
